Enchiladas ($ 8.95)

4It all starts with our homemade mild red chile enchilada sauce and your choice of chicken, beef, or cheese. We take Ancho and New Mexico red chiles and gently toast them to bring out their natural oils and incredible flavors. Then we caramelize yellow onions to bring out their sweetness, add in some roasted garlic, a hint of cumin, and a few fire roasted tomatoes. All this simmers until its just right, then we puree and add the finishing touches. We then take locally made corn tortillas, jack and cheddar cheese and layer everything all together. Comes with homemade chips & salsa plus cinnamon bunelos.
