Baja Grill Mix Recipes

WHAT TO USE IT ON

WHEN TO USE IT

Grilling, Sautéing, Frying, Braising, Roasting, Marinating, Dry-Rub, Blackening, Stewing, Seafood Boil

HISPANIC RICE

(SERVES 6-8 unless they are pigs)

2 cup long grain white rice

2 Tbsp "grill mix"

4 cup hot water

1 Tbsp cooking oil (we use canola)

OPTIONAL

1tsp cooking oil

1/3 cup brown onion (small or large, diced or julianned)

1/4 cup diced carrot

1/4 cup peas

1/2 cup diced stewed tomatoes

In a medium pot (that has a tight fitting lid), on med-high heat add oil and rice. Sauté stirring frequently (a wooden spoon works best when working with rice because it doesn't break the grains). As rice starts to brown add onion. Finish cooking until golden brown then add grill mix and stir. Add remaining ingredients quickly, then stir and cover. Bring to a boil (just a few minutes NO MORE STIRRING FROM THIS POINT UNTIL FINISHED). Reduce to low heat, now sit back relax and have another Corona/ shot of tequila, or if you are at our restaurant, get your tail back to work! The rice should be done in 10-15 min. When done, there should be no liquid left in the pan and your rice should look dry and fluffy (unless you've added the stewed tomatoes). Remove from heat and let sit covered for another 5 minutes. NOW YOU CAN STIR IT AND EAT UP CAUSE ITS DONE!

HOMESTYLE POTATOES

(serves more than 1 less than 20)

3 ea medium potatoes

3 Tbsp cooking oil

1 Tbsp "grill mix"

OPTION

1/2 cup jullianned onion

1/2 cup jullianned bell pepper (any color) or better yet try an anaheim chile)

Do I really have to tell you to wash them?? Peeled or unpeeled, diced in whatever size pieces you'd like, the bigger the slice, the longer it takes to cook. We prefer 1/2 inch unpeeled chunks. In a large sauté pan, heat the oil on medium to medium high for a minute or two, add the potatoes and sauté them until they start to brown and get soft in the middle, add peppers and onions and cook another 2 minutes, add grill mix seasoning to taste and serve.

PERFECT FAJITAS

3 ea bell peppers (red, yellow, and green)

1 ea brown onion (small)

1tsp "grill mix" season to taste

3 ea roma tomatoes

1 Tbsp cooking oil

Jullianne peppers and onions, slice tomatoes in wedges and set aside. In a large sauté pan or a wok, heat the oil on med-high for a minute or two (until it's almost smoking). Add the peppers and onions immediately, cook for two minutes stirring and flipping often. Add tomatoes and grill mix and cook for one minute more.

Remove from heat and serve.

For straight grilling (this works best with nicer cuts of meat such as choice or better steaks like, rib eye, NY strip, filet mignon, and t-bone's.

Shake or Dry Rub a generous amount on all sides of your meat and get your grill on!!!

For marinating try it on: London Broil, Top Sirloin

CHICKEN

For grilling, sautéing, or roasting, shake on generously, then cook

Citrus Marinated Grilled Chicken-

2 Tbsp Grill Mix

1/2 cup orange juice

1 tsp brown sugar

2 lbs raw chicken pieces

Combine orange juice, brown sugar, and Grill mix. Mix thoroughly, add chicken and refrigerate covered for

2-4 days. Then GRILL!!!

SEAFOOD AND FISH

For grilling, sautéing, or baking, shake on generously, then cook

For best results when grilling, combine grill mix with olive oil and then coat your fish/seafood generously.

Shake off excess oil before it goes on the grill.
